The same harvest of artichokes have been growing for over 3 decades in Summer's garden in the UK. They are harvested during the winter season mainly around November to January. They are then thoroughly cleaned and brined ready to create the special Tourshi.

Iraqi mixed pickles made like no other. A special recipe brought down through generations and tweaked over decades, started by Summers fathers side of the family and adapted by her mother which she then took on and made her own. Finally finding the right mix of particular vegetables as well as the Jerusalem artichoke making it even more unique. A blend of herbs, spices and date molasses, this tourshi gives a great balance of sweet and sour, a perfect addition to any meal.

Sweet, tangy, salty and spicy an Iraqi mango pickle condiment that will make your tastebuds have a rave. Using fresh mangoes and a mix of spices, a recipe developed the way Summer and her family enjoy eating it. Most famously used with Iraqi Masgouf (fish on the barbecue) but with some slices of tomatoes eaten with bread its a new experience.

Dolma is one of the most loved dishes in Iraq, it can be time consuming but so worth the wait. Can be made with meat bust its as great for vegans and vegetarians.  A party of stuffed vegetables using big flavours like pomegranate molasses, Summer's baharat blend and much more which is cooked in a sumac stock. Summer has developed the recipe for people to enjoy this special dish  and cooked by you in your own homes in your ovens!

Summer's family recipe for this Iraqi cured sausage is made with lamb and beef mixed with a baharat blend and garlic. This intense breakfast sausage is stuffed in artificial casing, cured, sliced and then frozen ready to eat with any style eggs or just on its own.
